Challenge
If you like to bake, fry and deep-fry, you will appreciate good ventilation. This is all the more true for commercial kitchens with their high air volume turnover. At the Johannesbad Specialist Clinic in Bad Füssing, the ventilation ran all day, although it is not actually needed all the time. Continuous operation generates enormous costs for electricity, heating and cooling. A new, demand-oriented ventilation control system is intended to increase energy efficiency – without compromising on air exchange.
Solution
The new kitchen ventilation system is controlled with Siemens Kitchen Air Flow. The innovative ventilation control adapts the air volume flow to the current conditions in the kitchen. The more operation, the stronger the system runs – efficiently and in line with demand. The principle is simple: cooking produces different particles, for example from fat. A powerful sensor measures the concentration of these particles in the air and transmits the measurement result to the control system as a continuous signal. It regulates the ventilation capacity in the same way as the actual kitchen operation.
